01 / STAGE

Origin Selection & Density Sorting

Screening moisture content (10.5%–11.5%) and optical sorting to isolate only the highest density, defect-free green beans.

02 / STAGE

Cast-Iron Drum Maillard & First Crack

Gentle convective heat drives caramelization. At 204°C, cellular pressure releases in the auditory 'first crack' unlocking sweet ketones.

03 / STAGE

Nitrogen Quenching & Degassing

Rapid air cooling halts thermal inertia in under 90 seconds, followed by 48 hours of resting under one-way degassing valves.

04 / STAGE

Pressure Profiling & Golden Extraction

Grinding to 280 microns, pre-infusion at 2 bars for 6s, ramping to 9.2 bars at 93.5°C for a luminous, viscous crema.
